Family Reunion at Snowbird

This past weekend was the Nielsen Family Reunion (Ben's mom's side of the family). It was up at Snowbird Resort. It started on Friday, but we weren't able to come up until Saturday. We had such a fun evening on Saturday at Tanner Flats. We had a wonderful dinner and just enjoyed talking with each other while the kids had fun running around. Ben's family is so fun and they have family reunions you actually want to go to. After, we went back to Snowbird and Jake and Ryan went swimming while Josh sat by the pool serenading us with his guitar. The next morning we enjoyed the beauty of our surroundings by taking the tram to the top of Snowbird (11,000 ft.). It was absolutely beautiful! It was Oktoberfest up there, so Ben and I took this silly picture! :)

Our Ford Crown Victoria died on us a couple of weeks ago, and now that Josh is driving we realized we needed to get another car. We bought this little Volkswagen Jetta for Josh and Ben to get around in since it gets great gas mileage.

A little trip to the Homestead Resort


This weekend after football practice we took the kids and headed up to the Homestead in Midway, Utah. They have concerts out on their lawn all throughout the summer and our favorite singer, Debra Fotheringham was to be performing. Unfortunately for us she ended up going to Colorado
for a great opportunity to perform there. We still wanted to go up and weren't disappointed when a singer/guitar player, Thom Sequoia took her place. We had so much fun at the concert, having hot chocolate at Fanny's Restaurant, swimming and just relaxing! We just stayed one night and headed back down Sunday afternoon.

Last night while at the Homestead, we watched a great concert on their lawn. The singer was Thom Sequoia and this is a picture of him. His music was uplifting and he is very talented on the guitar. You can check out his music at Thomsequoia.com

For those of you who may be wondering, Jake has finally kicked that stomach bug that he has had. On Sunday he was still sick, so our home teacher, Adam Oblad came over and he and Ben gave Jake a Priesthood Blessing. After the blessing, Jake didn't complain once more about his stomach and he was healed. I am grateful for the power of the priesthood and that Jake was blessed!

Football Fun!


Well, since football has started, that is our life. Every night is spent at 2 and 2 1/2 hour practices. It is a brutal sport and as a mom it can be hard to watch! This is a great picture of Jake's arm (the bottom bruise is from a face mask)! Gotta love football! :)

Chicken Pot Pie!!!

Chicken Pot Pie

INGREDIENTS:

4 sheets frozen puff pastry 2/3 c flour 1 TBLS minced garlic
1 egg, beaten ¼ c chicken base
4 chicken breast halves, or 2 c cooked chicken
2 TBLS cooking oil ½ small yellow onion
1/3 c butter 1 c cooked frozen peas
1 quart heavy cream (I use ½ 1% milk and ½ half and half)
1 c cooked chopped carrots pinch fresh nutmeg (optional)

DIRECTIONS:

Crust:
Preheat oven to 350*. Cut each sheet of frozen puff pastry into 1-inch strips, 8 inches long. On a large cookie sheet, weave strips into a lattice large enough to cover each pot pie. Brush beaten egg onto each lattice square. Bake for 5 min. or until dough has risen and turned light golden brown. Set aside until ready to assemble pies. Leave oven on at 350*.

Filling:
Season chicken with salt and pepper. Heat oil in a large skillet over med-high heat. Add chicken and saute until cooked through. Remove from heat and cut into chunks. Alternatively, you may use precooked chicken.

In a large saucepan, melt butter and then slowly add flour, stirring until consistency of peanut butter, but not brown like a roux. Slowly add cream and keep stirring. Add chicken base, garlic, and onion and stir until thickened. Add peas, carrots, nutmeg, if using, and chicken. Remove from heat. Fill 4 individual (I find it makes more like 5-6) oven-proof bowls with chicken mixture and then top each with a pre-cooked lattice square. Bake for 5 min. or until bubbly. Any remaining pie filling may be frozen.

I made a family favorite tonight for dinner. Chicken Pot Pie! I make a homemade pie crust instead of the frozen pastry puff. It is delicious!!

My (Becky's) mom's birthday was Monday and we decided for her birthday to give her updated grandchildren pictures. My cute friend, Andra Stoker, is getting into photography, so I asked her if she would take the pictures. She did such a great job!! We took these pictures of the grandkids and had a collage made of them. We are having a big luncheon at Sizzler for her tomorrow and that's when she'll get her present. I know that she is going to love it!!! THANK YOU ANDRA!!!

BUSY!

Life has been so busy lately! Jake came home from scout camp last week sick, as you may recall. Well, as of yesterday he was still sick! His football practices have been a nightmare! He has done well, but he has been so sick and has almost thrown up several times at practices. Wednesday he was just too sick to go. He has a lot of stomach pain and is completely fatigued all the time. Our doctor, Dr. Peterson, wanted Jake to come in yesterday. It turns out that he has an infection (viral) in his intestines. Dr. Peterson feels that his immune system was just overloaded last week when he was exposed to the stomach flu, and the millions of mosquito bites. He gave Jake a prescription of Phenergan for the nausea and we're just going to wait and see if Jake can kick this bug in the next day or two. He also said Jake needs to rest, so no football for a few days.
Last night was our Relief Society Summer Social and they asked if I would host it in our backyard. It was such a great evening and our yard looked pretty good. Everyone brought a type of salad. The food was delicious! The women in my ward are just the best!
I am so glad there isn't much going on today except piano lessons for Ryan and football tonight (Jake is going to just sit and watch his team and Ryan has practice too).

Football has started!

Here we go again...another year of football. Ryan is very excited and his coach is Coach Shane Reynolds. For those of you who know Todd and Cindy Egbert, Todd will be an assistant coach on Ryan's team. Which of course means Ryan is in great hands! Practices are 6 days a week Mon-Sat for 2 hours at a time. Jake is with Coach Dan Thompson again this year on the Midget "A" team. They are looking forward to another great year (last year Jake's team won the Championship against Bingham). They have lost quite a few players so we'll have to see how it goes. Jake is still not completely better from the bug he picked up at scout camp. Practice yesterday was torture for Jake as he was really sick and Coach Thompson made it a 2 hour 40 minute workout in the hot sun. Hopefully tomorrow he is a lot better!
Josh is getting so good at the guitar! He is an amazing musician and it is so fun to hear him play (when it's music we like). He is also good at the piano and he'll just sit down and play anything. I can't believe he is 16 and has his license. When did Ben and I get so old?
